Dingle Distillery is an independent Irish whiskey distillery established in 2012 by Oliver Hughes, Liam LaHart, and Peter Mosley. Located in Milltown on the Dingle Peninsula in County Kerry, southwestern Ireland, the distillery occupies a converted 19th-century sawmill originally belonging to the FitzGerald family. Officially opened on November 29, 2012, the distillery represents one of Ireland's new wave of craft whiskey producers. The distillery features bespoke copper pot stills designed by legendary Scottish still-maker John McDougall, producing approximately 50,000 liters of pure alcohol per annum. Dingle specializes in artisanal single malt and single pot still Irish whiskeys, using locally-sourced barley and pure water drawn from their own well. Their inaugural whiskey release in late 2016 marked the first commercial bottling from the distillery, following a maturation period in carefully selected casks including ex-bourbon, sherry, and port casks. Dingle has quickly established a reputation for exceptional quality, winning numerous international awards. The distillery operates a popular visitor center and maintains a philosophy of small-batch, hands-on production focused on quality over quantity.
