**TORABHAIG DISTILLERY** – The Gentle Peat of Skye **Location**: Sleat Peninsula, Isle of Skye, Scotland **Ownership**: Morrison Distillers – Marussia Group **Founded**: 2017 (renovation began 2014) **Capacity**: 500,000 liters annually **Status**: Open to visitors with dedicated visitor centre **Production Philosophy**: Torabhaig embodies "gentle peat" – creating elegantly smoked single malt whisky using high-phenol malt (75-85 PPM) that delivers warmth and complexity without medicinal notes. The distillery harnesses Skye's softer, more temperate southern landscape to craft a distinctive maritime-influenced spirit that stands apart from its northern neighbor Talisker. **Technical Specifications**: - **Water Source**: Pure spring water from Allt Gleann and Allt Breacach burns - **Mash House**: Eight 10,000-litre Douglas fir washbacks - **Fermentation**: Extended 72-100 hour fermentation for flavor development - **Stills**: One pair of bespoke Forsyths copper pot stills - **Spirit Cut**: Precise 64% ABV cut point - **Cask Strength**: 59-67% ABV for cask filling - **Maturation**: 10% traditional dunnage warehousing on Skye, 90% racked warehousing on mainland Scotland - **Peat Profile**: 75-85 PPM peat from Aberdeenshire, malted by Simpson's **The Torabhaig Story**: In 2002, the late Ian Noble of Noble Grossart purchased 20,000 acres on Skye with a vision to convert a derelict 19th-century farm into a working distillery. After his passing, Marussia Group realized this dream, beginning renovation in 2014 and commissioning the distillery in 2017. Torabhaig now operates with a unique dual-team structure: seasoned industry veterans mentor local apprentices with no prior whisky experience, fostering true island craftsmanship. **Product Portfolio**: - **Legacy Series**: Annual small-batch, no-age-statement releases chronicling the distillery's evolution - **Journeymen Series**: Experimental small-batch expressions crafted by apprentice distillers - **Key Releases**: Torabhaig 2017 (2021), Allt Gleann Edition No.2 (2023, launched in China), Cnoc na Moine Edition No.3 (2024) - **Future Milestone**: First 10-year-old single malt scheduled for 2028 release Torabhaig represents Skye's second single malt distillery, offering whisky enthusiasts a new lens through which to experience the island's legendary whisky heritage – one of gentle landscapes, maritime character, and refined peat smoke.

History

In 1972, Sir Ian Noble, co-founder of Scotland's first modern commercial bank Noble Grossart, relocated to the Isle of Skye. He acquired 20,000 acres of land, including the charming Eilean Iarmain distillery on Isle Ornsay, which had once formed part of Lord Macdonald's Slate Estate. Noble established the Gaelic college Sabhal Mòr Ostaig (affiliated with the University of the Highlands and Islands) in 1973, and an independent bottling plant, Pràban na Linne (meaning 'Whisky of the Gaels'), in 1976. He also planned to convert a B-listed historic farmhouse at Torabhaig into a distillery. The project received approval in 2002, but before plans could be implemented, Sir Noble passed away in 2010. Around the time of Noble's passing, Mossburn Distillers, a subsidiary of Dutch beverage group Marussia Beverages BV, was searching for a suitable location on Skye. Although the group had not originally considered historic properties, Sir Ian's Torabhaig farmstead proved to be an ideal site, despite the additional constraints that renovation would entail. The farm had been operational for 60 years and was in a semi-derelict state. Mossburn Distillers began renovating the farmstead in 2013, commissioning Simpson & Brown Architects (see 'Kingsbarns') to restore the existing buildings and design new structures faithful to the original architectural style. This required considerable effort, as the farmstead is one of the few examples of a quadrangular farm on Skye: infrastructure took three years to rebuild, and a bespoke removable slate roof was constructed to facilitate maintenance on the two stills. The entire seven-acre site was landscaped, with a pond excavated at its center to store cooling water collected from the condensers before treatment and discharge into the adjacent stream. Hamish Fraser was appointed Distillery Manager and Chris Anderson as Master Distiller. Whisky production commenced in January 2017, with the Visitor Centre, shop, and café opening in July of the same year.
